Soufflé au fromage du dimanche soir - Sunday night cheese soufflé

 

 

Une recette rapide et facile pour diner du dimanche soir !! Super bon avec une petite salade d'endives, avec des noix... ou pas.... C'était souvent un délice que ma maman nous faisait en fin de week-end !! Souvenirs, souvenirs...

Vous pouvez aussi varier ce plat en remplacant le fromage par une boite de crabe...  Je mettrais aussi cette recette sur le blog...

 

Ingrédients (4 personnes)

- 3 oeufs

- 75g de gruyère rapé

- 1 noix de beurre

- Sel

Pour la sauce béchamel

- 1/4 de litre de lait
- 20 g de beurre
- 2 cuillères à soupe de farine

- Sel, poivre et muscade

 

Préparation

- Préparez une sauce béchamel épaisse

- Portez le lait à ébullition.
- Dans une casserole faire fondre le beurre et rajoutez la farine.

- Versez le lait sur le mélange farine/beurre, en fouettant jusqu'à ce que le mélange épaississe

- Assaisonnez avec sel, poivre et muscade.

- Allumez le bas du four (thermostat 5/6 - 180°)

- Beurrez un moule à soufflé

- Séparez le jaune des blancs

- Un peu de sel dans les blancs et montez les en neige très ferme

- Ajoutez les 3 jaunes d'oeufs, le gruyère rapé à la béchamel et incorporez avec précaution les blancs en neige

- Versez dans le moule et faites cuire de 25 a 30 mn - planter un couteau dedans et c'est cuit s'il ressort sec..

- Servez immédiatement avant qu'il ne retombe !!

Un easy and quick recipe for Sunday nìght diners !! Excellent with an endives salad with nuts... or not...... It was a delicious dish my Mum was usually cooking at the end of the week-ends !!! Memories, memories....

You can cook a variation of this recipe replacing the cheese with crab... I will also post this recipe on the blog...

 

Ingredients (4 people)

- 3 eggs

- 2 oz of grated gruyere 

- A bit of butter

- Salt

For the bechamel sauce

For the bechamel sauce

- 2 tbs butter

- 2 tbs flour

- 1 cup of milk

- 1 ts salt

- 1/2 ts of grated nutmeg

 

Preparation

- Prepare a thick Bechamel

- In a medium saucepan, heat the butter until melted

- Add the flour and stir until smooth and until the mixture turns a light, golden sandy color 

- Meanwhile, heat the milk in a separate pan until just about to boil

- Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth

-  Season with salt and nutmeg

- Turn on the oven at 356° F

- Oil or butter the souffle mold

- Separate the yolk and the white of the eggs

- Salt the whites a bit and mount them very firm

- Mix the bechamel with the grated gruyere, the yolks and incorporate very smoothly the mounted whites

- Pour in the oily mold and cook for 25 to 35 mn - stick a knife and if it comes out dry, this is cooked

- Serve immediately before it deflates!!
