Le gateau de Bourgogne de Marguerite - Marguerite Bourgogne cake
Un gateau légé, mousseux et caramélisé qui m'a été envoyé par ma chère amie Marguerite. Ce gateau a été servi a plus de 100 personnes lors de son mariage... toute une histoire... alors à vos casseroles !!
Ingrédients (pour 6 personnes)
- 4 oeufs
- 1/2 litre de lait
- 80 g de beurre
- 25 g de sucre
- 50 g de farine
- un peu d'extrait de vanille - ou un sachet de sucre vanillé
Pour le caramel
- 125 g de sucre en poudre
- 10 cl d'eau
Préparation
- Allumez votre four à 150º C
- Faites un caramel
- Dans une casserole, mélanger le sucre et l'eau
- Battez avec un fouet tout en portant doucement à ébullition
- Une fois l'eau frémissante, le caramel va commencer à se colorer
- Obtenez une consistance assez épaisse pour nappez votre moule
- Tapissez le fond du moule du caramel
- Faites tiédir le lait avec le sucre et la vanille
- Dans une casserole faites fondre le beurre ,y ajouter la farine, bien mélanger
- Incorporez les jaunes d'oeufs un par un
- Retirez du feu et y ajouter petit à petit le lait en évitant de faire des grumeaux (consistance d'une béchamel)
- Montez les blancs d'oeufs en neige et incorporez les à la préparation
- Laisser cuire environ 3/4 heure
- Démoulez dès la sortie du four
- Dégustez froid

A very light, foamy, caramelized cake: This recipe has been sent from my dear friend Marguerite. This cake has been served to 100 people during her wedding... a whole story... so try it !!
Ingredients (for 6 people)
- 4 eggs
- 1 pt of milk
- 2 oz of butter
- 1.25 tbs of caster sugar
- 3.5 tbs of flour
- A little bit of vanilla extract or one pack of vanilla sugar
For the caramel
- 4 oz of caster sugar
- 0.21 pt of water
Preparation
- Turn on your oven to 300º F
- Prepare a caramel
- In a pan, blend the sugar and the water and heat gently
- Whip until it starts boiling
- When starts boiling the caramel will become gold, do not burn it
- Whip until you get a pretty thick consistance to coat your pan
- Coat the bottom of your cooking pan
- Heat gently the milk with the sugar
- In another pan, melt the butter and blend with the flour
- Incorporate one by one the yolks of the eggs
- Take out from fire and add little by little the warm milk avoiding lumps (consistancy as to be like a bechamel)
- Mount the whites of the eggs and incorporate to the preparation
- Pour on the caramel in your mold
- Cook for around 45 mn
- Unmold straight when cooked (so the caramel will be easy to unmold)
- Savor cold
