Brochette de boulettes d'agneau sauce tomate épicée et riz pilaf de Soumia - Soumia lamb balls skewers with spicy tomato sauce, pilaf rice
Bon, je suis définitivement fan de cuisine marocaine et pouvoir réaliser une recette au barbecue, c’est plutôt cool. Accompagnés de riz pilaf, vous ferez un hit pour les diner d’été !!
Ingrédients (pour 4 personnes)
- 600 g de d’agneau
- 1 oeuf
- 25 cl de sauce tomate
- 250 g de riz long grain
- 1 oignon
- 2 gousses d’ail
- 2 cs de chapelure
- 2 cs d’huile d’olive
- 50 cl de bouillon de volaille – 1 tablette
- 1 cs d’harissa
- 1 cc de ras-el-hanout
- ½ cc de cumin en poudre
- 8 brins de coriandre
- Sel, poivre
Préparation
- Mélangez l’agneau avec l’œuf, la chapelure, le ras-el-hanout,
- Ajoutez la moitié de l’oignon haché, l’ail pressé et la moitié de la coriandre ciselée, sel et poivre
- Faites 12 boulettes et placez-les au congélateur 10 mn
- Faites revenir 5 mn le reste de l’oignon haché avec l’huile et le cumin dans une poele
- Ajoutez le riz, mélangez 2 mn puis ajoutez le bouillon très chaud
- Couvrez et laissez cuire 20 mn à feu très doux
- Embrochez les boulettes par trois sur les brochettes et faites cuire 5 mn de chaque coté sur le BBQ
- Réchauffez la sauce tomate avec l’harissa.
- Servez le riz nappé de sauce tomate épicée et parsemez de coriandre ciselée

OK, I am definitely a big fan of Moroccan cooking and love to have it also on BBQ ! Served with pilaf rice, you will make a hit in Summer diners !!
Ingredients (for 4 people)
- 1 lbs 8 oz of ground lamb
- 1 egg
- 17 tbs of tomato sauce
- 8 oz of long grain rice
- 1 onion
- 2 garlic cloves
- 2 tbs of crumbs
- 2 tbs of olive oil
- 1 pt of broth of poultry
- 1 tbs of Harissa sauce - spicy Moroccan sauce
- 1 ts of ras-el-hanout – Moroccan spice
- ½ ts of de cumin powder
- 8 coriander sprigs
- Salt and pepper
Preparation
- Mix the lamb meat with the egg, the crumbs and the ras-el-hanout
- Add half of the chopped onion, the chopped garlic and half of the slices coriander, salt and pepper
- Create 12 balls and place them 10 mn in the freezer
- Cook 5 mn the rest of the chopped onion in the olive oil and the cumin in a deep pan
- Add the rice, blend for 2 mn and add the hot poultry
- Skewer the balls by 3 and cook 5 mn each side on the BBQ
- Heat the tomato sauce with the harissa
- Serve the rice with the tomato sauce, add the skewers and sprinkle with sliced coriander
