Mille-Feuille de pommes de terre au chèvre frais de Flo - Flo's potatoes and goat cheese Mille Feuille
Une super recette d’entrée ou de salade d’été chaude… En plus, elle est jolie !!
Ingrédients (pour 6 personnes)
- 6 Pommes de terre à chair fondante
- 1 cœur de laitue
- 2 buches de chèvre frais
- 30 pétales de tomate confite
- 1/4 botte de basilique
- 10 cl de crème liquide entière
- 2 pincées de piment d'Espelette
- Sel, poivre
- Huile d’olive
Préparation
- Préchauffez le four à 180 °C.
- Lavez et épluchez les pommes de terre, et taillez chacune en 3 tranches de 5 mm d'épaisseur
- Colorer les pommes de terre avec un filet d'huile d’olive pendant 4 min de chaque côté
- Ciselez le basilic et le réserver
- Fouettez la crème liquide
- Écrasez le chèvre avec une fourchette
- Taillez les tomates confites en petits dés.
- Mélangez la crème montée, le chèvre, les tomates confites et le basilic
- Assaisonnez de sel, de poivre et de piment d'Espelette
- Montez les mille-feuilles en intercalant une tranche de pomme de terre et une couche de crème
- Renouvelez l'opération 3 fois en terminant par la pomme de terre
- Enfournez ensuite à 180 °C pendant 5 min
- Dressez quelques feuilles de laitues dans chaque assiette et posez un mille-feuille
- Nappez le tout d'un filet d'huile d'olive

- 6 potatoes – melting flesh
- 1 heart of lettuce
- 2 logs of fresh goat cheese
- 30 petal of confit tomatoes
- 1/4 bunch of basil
- 7 tbs of liquid fresh cream
- 2 pinches of Espelette pepper
- Salt and pepper
- Olive oil
Preparation
- Preheat the oven at 356° F
- Wash and peel the potatoes and slice them in 3 to 5 cm thickness
- Color the potatoes slices with a bit of olive oil for 4 mn on each side
- Chisel the basil
- Whisk the liquid cream
- Crush the goat cheese with a fork
- Slice the petals of tomatoes in little cubes
- Blend the whipped cream with the goat cheese, the tomatoes and the basil
- Season with salt, pepper and Espelette pepper
- Build the mille-feuille interposing a slice of potato and a layer of the cream
- renew the operation 3 times finishing with a slice of potato
- Put in the oven for 5 mn
- Dress some lettuce leaves in a plate and put a mille feuille in the center
- Sprinkle with olive oil
